Effective Cleaning and Cleaning Schedules
To ensure that effective cleaning is carried out it is strongly recommended that a 'cleaning schedule' is used. Essentially a cleaning schedule is a written document in which the areas requiring cleaning are clearly identified, together with the frequency of cleaning, the cleaning agents to be used, and a check that the task involved has been properly completed.
Factors that we consider are:
1. What is to be cleaned?
We identify all areas to be cleaned and include surfaces prone to contamination, and less obvious areas such as door seals to fridges etc. We compile a numbered list of specified areas to be cleaned
2. The frequency of cleaning each item or surface
The nature of the surface that requires cleaning is considered and in determining the periods between cleaning the following factors are considered:
- Does the surface/item of equipment come into direct contact with food?
- Are the surfaces requiring cleaning prone to contamination?
- Are the areas to be cleaned accessible?
- Are special tools required to enable access?
3. Who cleans what
We identify which member of staff is responsible for each area/cleaning task
4. Monitoring the schedule
We identify who is responsible for checking that the cleaning has been carried out adequately. A record is made of checks carried out. This identifies where a particular task may not have been completed satisfactorily
5. Cleaning equipment/materials that is to be used
We specify exactly what chemicals and materials are to be used for each particular area or category. This includes the type of cleaning equipment and the dilution of detergents and/or disinfectant solutions to be used.
6. Precautions are enforced to protect the person carrying out the cleaning
7. Reviewing the adequacy of the cleaning schedule is carried out periodically.
It may be an idea to have a separate schedule for different areas of the business. For example, in an office or call centre it may be useful to have four schedules, one each for the call centre room, office rooms, conference room & kitchen/dining area.
